Holiday Recipes to Enjoy Poolside

Food

Winter holidays bring together family and friends like no other time of year, but that doesn't mean you have to spend all your time dining indoors. This year, do some of your holiday entertaining poolside and use your outdoor grill to create a few new seasonal recipes. Depending on where you live, you may need to stock up on charcoal briquettes early; stores may carry minimal grilling supplies in winter.

Outdoor Cooking

You don't need to make any major changes to your grill setup during cool weather. However, if the temperature is below 50 degrees Fahrenheit outside, you need to let the grill heat for about twice as long as you would on a hot day.

Cold-Weather Grill Setup

  1. Position the grill at a 45-degree angle to the wind if it's windy outside.
  2. If you have a gas grill, set the burners to medium-high. If you have a charcoal grill, use briquettes to form one layer (the amount needed varies with the size of the grill) and carefully light the charcoal.
  3. Close the lid and let the grill heat for about 30 minutes.

Barbecued Prime Rib

Start to finish: 6 hours
Servings: 8

Ingredients

  • 10-pound boneless prime rib roast
  • vegetable oil
  • kosher salt
  • freshly ground black pepper

You’ll also need:

  • 2 large aluminum roasting pans
  • kitchen twine

Instructions

  1. Remove the grill's cooking grate. Arrange the charcoal along the left and right sides of the charcoal tray after it ashes over. If using a gas grill, turn off the center burner.
  2. Set an aluminum roasting pan half-filled with water between the charcoal piles or on the center burners. Replace the cooking grate and close the lid.
  3. Coat the prime rib with vegetable oil and season it liberally with kosher salt and freshly ground black pepper. With the kitchen twine, tie the roast crosswise at 1- to 1½-inch intervals. Set the roast in an aluminum roasting pan.
  4. Set the pan with the roast in it on the cooking grate over the pan of water. Close the grill lid.
  5. Grill the roast until it reaches 125 degrees Fahrenheit or for about six hours. Rotate the roast 180 degrees every hour. If using a charcoal grill, add eight pieces of charcoal every hour.
  6. Take the roast off the grill. Cover the roast with foil and let it rest for 30 minutes before slicing.

Smoked Sweet Potato Casserole

Start to finish: 1 hour
Servings: 6

Ingredients

  • 2 pounds sweet potatoes, cubed
  • kosher salt
  • ¾ cup brown sugar
  • ¼ cup melted butter
  • ¼ cup chopped pecans
  • vegetable oil
  • 2 cups small marshmallows

You’ll also need:

  • ½ cup applewood chips

Instructions

  1. Boil the potatoes in salted water until tender, about 15 minutes, and drain. While the potatoes boil, add applewood chips to the charcoal or the smoker box, depending on the type of grill you’re using. Close the grill lid.
  2. Mash the potatoes with the sugar and butter using a potato masher. Fold half the pecans into the potatoes and transfer the mixture to a baking dish.
  3. Sprinkle the marshmallows and remaining pecans over the sweet potatoes.
  4. Place the casserole on the grill when the chips start smoking. Close the lid and smoke the casserole until the marshmallows caramelize, about 30 minutes.

Tip

Make the sweet potato casserole while the prime rib rests and the grill is still hot.
