Poolside Recipe - One-Ingredient Leek Soup
This One-Ingredient Leek Soup is the perfect recipe to remind us of fresh summer food to come, but it is still comforting and warming for the cooler March days. All you need from the store is one ingredient. Your kitchen is probably stocked with the rest to make this simple soup.
Leeks have many health benefits, including immune-building properties, notable quantities of vitamins A and K, folic acid, niacin, riboflavin, magnesium, and thiamin. Leeks are an oft-forgotten vegetable, but are delicious and extremely nutritious.
First, take three large leeks, about three cups worth. Leeks are in the onion family and look like a large, green onion.
Slice the end off and then cut the leek in half, rinsing each side in water to remove any dirt from the inside.
Continue chopping the leeks and place into a pot.
Fill the pot with water to cover the leeks (about four cups). See how happy I am making this soup?
Bring to a boil and simmer on low for about 20 minutes until the leeks are soft.
Add 1 teaspoon of salt, stir and serve hot.
For serving, include hot sauce and soy sauce for topping. This recipe is simple enough to make even with little ones under foot.
One-Ingredient Leek Soup makes a delicious lunch with hot buttered toast, smoked salmon and a tall glass of water.
One-Ingredient Leek Soup
Serves 2, generously

3 cups rinsed and sliced leeks
4 cups water
1 teaspoon salt
Soy sauce and hot sauce for serving
Slice leeks lengthwise and rinse inner rings with water. Slice rings into small pieces (rinse again in a mesh strainer under running water if there is still visible dirt) and place in a pot. Add water and simmer for 20 minutes or until leeks are soft. Serve in a bowl, topped with soy sauce and hot sauce to taste.
